We celebrate with cascarones...confetti eggs! These are hand made but we do not blow out the yolks. Instead, we prepare ahead of time by making soft boiled eggs to serve for breakfast. Tap off the top and scoop out the eggs and enjoy. Or dump out the raw egg for scrambled eggs or baking. Then wash out the eggs and collect over time.
